Looking for a new pair of racing shoes, what would you get if you were buying a new pair?

Think you'll ever get out to the track? OGracing typically has some decent deals on close-out models - http://www.ogracing.com/closeout/shoes

Nike Free lightweight runner. Way better "racing" shoe (for me) than my Simpsons plus they're comfortable enough to stand around in all day, the bottom is every bit as flexible and they're more grippy on the peddles which works better for me. I only use the others if I'm doing something that requires a SFI rated shoe.

If you're not looking for fire rating...get a wrestling shoe. Weigh nothing and you can feel the pedals really well.

And you can "wrestle" with other men. Oh wait, you drive a Mustang, not a Miata. :)
